How about you dig in to a healthier cheesecake with no or very little guilt. Actually never think of food as a naughty thing to punish you or a treat to reward you. It is JUST fuel for your body and mind! You decide how much of it goes in and whether it improves your health or make it worse. It is all about BALANCE!
Vegan cheesecake has been on my mind for a while and every time I see a video or a yummy picture of the cheesecake, I promise myself to make one and so this is my very first attempt which is not a bad one and perhaps needs a little finesse but hey, it tastes A.M.A.Z.I.N.G
This one is made with CASHEWS as the base! If you’re skeptical about cashews’ ability to replace luxuriously creamy cream cheese, you wouldn’t be the first. I was skeptical for a while…until I tried it.
Once soaked for few hours or overnight, the cashews get incredibly soft and creamy, so they very easily blend into the most luxurious, creamy filling you can imagine. Paired with full-fat coconut milk, a bit of coconut oil, maple syrup, it makes a pretty damn close replica of the cheesecake. Although not a huge fan of creamy (sickly) cheesecake, this one is A LOT healthier...
Below are the ingredients and instructions for you...
For the crust:
1 and 1/2 cups of pitted dates
2 cups of mixed nuts
For the cheesecake
2 cups raw cashews, soaked for a few hours or overnight
2 cups blueberries, frozen and slightly thawed
1/2 cup maple syrup or agave nectar
1 cup of almond milk
2 TBS of melted coconut oil
TO MAKE THE CRUST:
Combine dates and mixed nuts in a food processor and pulse until the mixture resembles wet crumbs and sticks together when pressed between your fingers, press the crumbs into the prepared pan using the back of a spoon or the bottom of a glass. Then set aside to rest in the fridge.
TO MAKE THE CHEESECAKE:
Drain and rinse the cashews and throw everything into a food processor or a high-speed blender.Blend until the mixture is completely smooth. Save a cup of the plain mixture and then add the blueberries to the remaining one.Blend well againPour over the prepared crust the blueberry mix then add the plain one on top, decorate to your taste and freeze for at least two hoursLet sit on the counter for about 15 minutes before slicing and serving. To impress your guests, get it out of the freezer about 20 min before serving.
